What is a Chaffle?

If you have looked at keto recipes you have probably heard the term ‘chaffle’. If you havent heard of a chaffle then just thank me now. A chaffle is simply a cheese mixture, cooked in a waffle maker that turns into a lovely substitute for bread without the load of carbs. I love them and when I really want something in sandwich style this checks all the boxes plus some! This Chicken Bacon Ranch Keto Chaffle Sandwich makes for a quick and easy lunch.

By combining a few simple ingredients you have a ‘sandwich bread’ that is crispy on the outside and soft on the inside that will hold up to any type of sandwich you can think of, no need to break out the white bread again. There are multiple combinations of ingredients that make up various types of chaffles but today we will keep it straight forward. This chaffle recipe is my go-to for all things savory.

The Chicken….The Bacon

So, I feel like I cheated a bit on this recipe because it was so easy which makes it perfect for a grab and go lunch. On Saturday, I did some meal prep (a big key to keto success and soon to be blog post); I made 5 pounds of chicken breast in the slow cooker and fried up some bacon to have ready to go. I plan to use the chicken breast for multiple different meals and also froze some for later use. The lettuce came straight off the porch, literally from my Simple Lettuce Garden. The tomato and ranch were store bought……hey this is grab and go remember.

Chicken Bacon Ranch Keto Chaffle Sandwich

Perfect and deliciously satisfying this Chicken Bacon Ranch Keto Chaffle Sandwich is way better than the drive-thru. An easy grab and go lunch using my favorite recipe for a savory chaffle!

Ingredients

  • For the Chaffle
  • 1 Tablespoon Superfine Almond Flour (I use Bob's Red Mill)
  • 1 Egg
  • 1 pinch of baking powder (about 1/8th of a teaspoon)
  • 1/3 cup Mozzarella Cheese-shredded PLUS 2 teaspoons shredded to put in the waffle pan just before adding the chaffle mixture to make for a crispy outer edge
  • Olive oil-just enough to brush the inside of the waffle iron to prevent the chaffle from sticking
  • The Chaffle Sandwich Insides
  • 3 ounces cooked and shredded Boneless Skinless Chicken Breast
  • 2 slices Bacon
  • 2 slices tomato-I used slices of Roma tomato
  • 2-3 lettuce leaves
  • 1 Tablespoon Ranch Dressing-I used Marzetti's Simply Dressed (no preservatives)

Instructions

To make the Chaffle

Shred the cheese or can used already shredded cheese.

Add all the chaffle ingredients to a bowl (with the exception of the 2 teaspoons extra cheese) and stir to combine.

Use the olive oil and brush the inside of the waffle maker so that the chaffle doesn't stick when cooking.

Plug in your waffle maker and when it is ready add 1 teaspoon of the reserved shredded cheese to the bottom of the waffle maker-this makes the crispy layer on the outside of the chaffle.

Then immediately add 1/2 of the chaffle mixture and close the waffle maker until the cooked.

Take out the first chaffle when cooked and brush on more olive oil if needed, add the last teaspoon of the reserved cheese and the remainder of the chaffle mixture and cook the second chaffle until done.

After both chaffles are done, with the crispy sides to the outside of the sandwich spread your ranch dressing on the chaffle.

Add the lettuce and tomato.

Add your chicken-this can be heated or cold depending on how you like it, I heated mine in the microwave.

Add the bacon.

Top with the second chaffle.

Notes

You do not have to do the extra cheese to make the crispy outside, I just like it like that! I think you will too!
