Perfect for the upcoming July 4th holiday or anytime this summer you must make these Keto Whole Fruit Summer Berry Popsicles. Packed with vine-ripened strawberries and juicy blueberries this is a keto keeper!
What makes these popsicles Keto?
When you think of a popsicle you probably have flashbacks to the ‘twin’ style popsicles that were sugary and flavored artificially with something that may or may not have resembled the taste of an orange. Although we didn’t complain about these as kids, we now know they probably were not the best choice if looking at them from a nutritional standpoint. So, when coming up with my Keto Whole Fruit Summer Berry Popsicles I knew that I wanted something that was keto friendly.
For the base of the popsicle, I used a lite coconut milk from Thrive Market. Coconut milk is the perfect base for these popsicles. Coconut milk is light with a little bit of creaminess, from the good healthy fats, with just a hint of tropical coco-nutty goodness. For the berries, I chose perfectly ripened, sweet strawberries and plump juicy blueberries. Because the berries were nice and ripe they only needed a couple teaspoons of granulated sugar substitute. Depending on the sweetness of your berries you can adjust the amount of sugar substitute to suit your taste.

Oh, this is so exciting! I can’t wait for you to try these Keto Whole Fruit Summer Berry Popsicles with the strawberries and blueberries, but as I was making these I couldn’t help but think of all the different combinations that could be made by using the lite coconut milk and granular sugar substitute sweetened to your taste. Here are a couple that I want to try, I think you might too!

- Lemon Basil (ummm, I am trying this with my garden Basil)
- Raspberry Lemon
- Blackberry Lime
- Blueberry Lemon
- Coconut dipped in Lilly’s chocolate rolled in crushed nuts (you will see this on here soon!)
How to freeze and store the Summer Berry Popsicles
So you can see there are endless combinations for a keto summer frozen indulgence, but you can start today with these Keto Whole Fruit Summer Berry Popsicles. This recipe made 6 popsicles but you could easily double the recipe to make more. They took about 4 hours to completely freeze in the mold. The popsicle mold can be found in many retail stores or online, I used a silicone mold and I like the way the popsicles easily slide out of the mold. I think the best way to enjoy the popsicles is right out of the mold if you will be eating them right away or you could pop them out and store them in a freezer bag and take them out one by one.

Perfect for the upcoming July 4th holiday or anytime this summer you must make these Keto Whole Fruit Summer Berry Popsicles. Packed with vine-ripened strawberries and juicy blueberries this is a keto keeper! Wash your fruit. Remove the stems of the strawberries and dice them about the same size as your blueberries. In a bowl or container with a pour spout (as seen in the video), add your granulated sugar substitute to the berries and crush them partially so that they are smaller in size a release some juices. Open your can of coconut milk and whisk it gently in the can to stir in the solids (the yummy milk fats). After stirred up, pour into the container with the fruit and mix all together. Pour into popsicle mold and freeze approximately 4 hours or until solid.
