I have always loved Chinese cuisine and honestly, I didn’t think I would be eating it anymore when I started keto. The Mongolian Beef and the fried rice and the potstickers……what would I do? This is when I did some research and although this is not an original recipe, it is a compilation of several egg roll in a bowl recipes and is now what I think is the absolute perfect of them all, Keto Chinese Chicken Egg Roll in a bowl.

How do I make a Keto Egg Roll?

So first let me tell you, we are not actually doing any rolling of anything. This is completely a one pot meal that is served in a bowl, basically a deconstructed egg roll. The ingredients are:

  • Diced chicken
  • Shredded Cabbage or bagged coleslaw mix
  • Riced Cauliflower
  • Red Bell Pepper
  • Eggs
  • Green Onions
  • Fresh Garlic
  • Salt and Pepper
  • Soy sauce or coconut aminos
  • Sesame oil
  • Sesame seeds
  • Crushed Red pepper or cayenne pepper (optional)

Easy ingredients that give you those classic Chinese take out flavors without the sugary sauce, the white rice and the hidden carbs.

Tips for the perfect Keto Chinese Egg Roll in a Bowl

The first and most important tip I can give you when making this dish is MAKE A WHOLE BUNCH! Seriously though, you will see in the video that I make mine in a big electric skillet. This is about the size I make each time I cook up a batch and honestly you could half this, but I don’t recommend it because then you will be sad because you don’t have enough and it is way yummy! This would be a perfect dish for a crowd and could easily be doubled or more. I plan on portioning out our leftovers for lunches as this heats up beautifully.

Another tip I can give you is do not in any way substitute the sesame oil for a different oil. The sesame oil is actually my favorite ingredient in the dish. It gives this Keto Chinese Egg Roll in a Bowl such an authentic Chinese flavor that there is just no substitution for this.

Last tip. If you just aren’t that into chicken then pick another protein. I have made this exact same recipe with pork, but you could use shrimp, crab, or steak, any of these would be equally delicious. If you wanted to make it ‘meatless’ then just increase the amount of eggs and maybe add a bag of stir fry vegetables.

Ingredients

  • 2 Large Chicken Breast or 3-4 if they are smaller in size
  • 2 bags of cabbage/coleslaw mix found in the bagged lettuce section of the grocery store
  • 1 bag riced cauliflower
  • 1 red bell pepper sliced thin
  • 4 whole eggs
  • 4 large green onions
  • Coconut Aminos or Soy sauce
  • 4 cloves of garlic minced
  • salt and pepper
  • crushed red pepper (optional)
  • Sesame oil 4 Tablespoons
  • Sesame seeds

Instructions

Drizzle 1 Tablespoon of sesame oil (or butter) in a large deep pan or an electric skillet

Add in chicken, season with salt and pepper and sauté until no longer pink and cooked through

When chicken is almost cooked add in optional crushed red pepper flakes about a 1/2 tsp, and the garlic and stir

Add in red pepper strips and riced cauliflower and stir, add a couple splashes of the soy sauce or liquid aminos to this mixture

Now add the coleslaw mixes along with a few shakes of salt and pepper and another couple splashes of soy/aminos

Cover with a lid for approximately 5 minutes

After about 5 minutes, make 4 wells in the mixture and crack an egg in each well, season the eggs with a shake of salt and pepper

Cover again with a lid for 2-3 minutes to allow the eggs to set up a bit

Now take the lid off stir everything together to allow the eggs to finish cooking then add one more splash of soy/aminos

Mix in the green onions and the remainder of the sesame oil

Serve topped with sesame seeds

Notes

This is an easy to pull together dinner dish. Just a couple things to note: the riced cauliflower can be added frozen straight from the bag. You can adjust the amt of salt and pepper to your liking. The same with the sesame oil, add more or less depending on your taste. Enjoy!
