Quick, easy and perfect for a gameday snack, these Beef and Queso Loaded Keto Nachos are sure to be a TOUCHDOWN! (or a homerun, or a goal, basket..whatever your thing is)…..I personally am a football girl at heart, all three of my boys played little league and a bit in high school. I was a die hard St. Louis Rams fan and Kurt Warner was my hero!

Ok, back to nachos. When thinking of game day snacks, thoughts of chips and dips, pretzels, hoagies and such come to mind. None of which are keto. This recipe for Beef and Queso Loaded Nachos will check all the boxes, perfect for keto and perfect for game-day!

The Pigskin

Literally, let’s jump right in to the heart of the recipe. Of course, to use the traditional nacho chips would be a major penalty in our keto diet. In this recipe we will be using pork rinds. A plain pork rind like Mac’s is the perfect vessel to get a big scoop of all the beef and queso loaded nacho goodness. You could use a low carb tortilla that has been fried into chips, but I like the lower carb option of the pork rinds.

Team Players-‘Toppings’ for the Beef and Queso Loaded Keto Nachos

We know we are using the pork rinds as our ‘chips’ but what about the toppings. It’s not loaded nachos without all the toppings. For this recipe, beef taco meat is what I use and the toppings are literally endless! I am keeping it pretty traditional in tis recipe and here is what I am using:

  • Crisp Iceberg lettuce-thinly sliced
  • Green Onions
  • Fresh tomatoes
  • Cilantro
  • Jalapenos
  • Black Olives
  • Shredded Mexican Cheese
  • No sugar salsa
  • Sour Cream
  • Avocado

The Hail Mary

The last ingredient, the thrill of any nacho of course is the nacho cheese. In our Beef and Queso Loaded Keto Nachos I am talking specifically about white queso. Sometimes called, white cheese dip, queso blanco or just nacho cheese, this stuff is good and my version meets all the keto requirements!

White queso is actually very easy to make. Yep, and the ingredients are at any grocery store. A simple combination of white American cheese, green chiles, heavy cream and a couple of spices is all that is required to make this creamy, warm, white queso. In the YouTube video and the recipe below, I’ll give you all the steps to bring this sauce together and you will be eating and rooting for your team in no time.

Can I use something besides beef for the loaded nachos?

Absolutely! In fact, when I was creating this recipe, I was thinking of all the other types of nachos that I wanted to try. These came to mind:

  • BBQ pulled pork Nachos with keto BBQ sauce
  • Buffalo Chicken Nachos with a cheesy ranch sauce
  • Asian Nachos-with toppings of cheese, green onion, wasabi and peanut sauce
  • Greek Nachos-with chicken, feta, kalamata, balsamic sauce

The last 2 types of nachos, the asian and greek are inspired by 2 ‘non-keto’ dishes that I had eaten before living a keto lifestyle. I hope to re-create these and share them with you as they were both amazing and so unique in flavor!

The Touchdown

Enough with the football analogies right!? Really though this recipe is fun, easy, quick and the perfect keto game-day snack for Sunday football at home, tailgating or just hanging out with friends and watching whatever kind of game you love!

Beef and Queso Loaded Keto Nachos

Quick, easy and perfect for a gameday snack, these Beef and Queso Loaded Keto Nachos are sure to be a TOUCHDOWN!

Ingredients

  • 1 large bag of plain pork rinds, I like Mac's Original Pork Skins.
  • 1 pound ground beef
  • 1 pkg no added sugar taco seasoning like LaTortilla Factory Taco Sauce-Get the link in the notes below!
  • For the Queso Sauce
  • 1/2 pound white American cheese-I found it in the deli
  • 1- 4 ounce can of diced green chiles
  • 1/3 cup heavy whipping cream
  • 1 Tablespoon butter
  • 1/4 tsp cumin
  • 1/4 tsp garlic salt
  • pinch of cayenne pepper
  • The Loaded Nacho Toppings
  • 2 Roma tomatoes, diced
  • 5 green onions diced
  • 1 cup thinly sliced iceberg lettuce
  • 1 Avocado, diced
  • 1 4 ounce jar of sliced black olives
  • 1/4 cup jalapenos-I used jarred
  • 1/4 cup shredded Mexican style cheese
  • 1/3 cup of sour cream
  • 1/2 cup of fresh chopped cilantro
  • Sugar free or no added sugar salsa

Instructions

Brown the ground beef, drain the grease and add the Latortilla sauce. Let simmer on the stovetop while getting the queso made.

For the Queso sauce

In a small pot on the stove add the white American cheese, the heavy cream and the butter and heat on low until cheese and butter have melted, stirring occasionally.

When melted, add the chiles and the spices to the cheese sauce.

Load it up

On a large platter, spread out the pork rinds evenly, then add the ground beef mixtures, drizzle the cheese sauce and load up those toppings!

Notes

The nachos are best served immediately and while the cheese sauce is warm. I recommend assembling the nachos right before serving to keep those pork rinds nice and crunchy. The link for the LaTortilla no sugar taco sauce is here! https://amzn.to/3lt2feZ
