    Keto Crustless Holiday Quiche

    The holidays are so full of hustle and bustle with cooking, cleaning, decorating and of course shopping. This quick and easy but super delicious Keto Crustless Holiday Quiche is the perfect answer to your holiday keto meal planning. Perfect not only because it’s keto but because it is the quiche for a busy weeknight or weekend breakfast or brunch yet fancy enough to serve for family gatherings and the perfect, pop it in the oven, Christmas morning breakfast. I can’t wait for you to try it!

    I have to give credit for this recipe to my bestie since the fifth grade! This is her recipe and it’s always a hit! Recently my bestie and a bunch of us girls went on a weekend trip to kick off the holidays and do some visiting and shopping. We stayed at my friends lake house and she made this quiche while we were all get ready for the day. I think she secretly made it just for me because I’m ‘keto’……..but everyone loved it. I knew then that I wanted to share it on the blog, it would just be wrong not too..it is that good!

    Ingredients in a Keto Crustless Quiche

    So few ingredients in this recipe, but so delicious and clean, and you won’t even miss the carb loaded crust. For the quiche you will need the following:

    • Breakfast pork sausage
    • Yellow onion
    • Eggs
    • Cheddar cheese
    • Heavy Cream
    • Baby Spinach
    • Salt and Pepper

    Yep, that’s all, that’s it….now this is some clean eating with wholesome ingredients and lots of good fats to support our keto diet.

    What other types of Keto Crustless Quiche can be made from this recipe?

    I wanted to keep this quiche recipe true to form, just as my friend makes it. Secretly, and I know she knows this because we are both foodies; I was thinking of all the different combinations that could be made just by using the cream, egg, onion, salt and pepper base. A few that came to mind that would be equally delish are:

    • Broccoli and Cheddar
    • Ham and Swiss
    • Chorizo, Jalapeno, Green Onion, Mexican Blend Cheese
    • Bacon, Mushroom, Gouda
    • Sausage, Bacon, Ham, American Cheese slices on top (Similar to the Hardee’s Loaded Omlette Biscuit-I loved these pre-keto….eeek with a whopping 48 carbs per biscuit sandwich…no wonder I needed a nap afterwards!)

    Different ways to bake up this Keto Crustless Holiday Quiche

    When you are a food blogger, you make ALOT of food. Testing and trying recipes, there can be and are often lots of leftovers.

    This quiche is the perfect recipe to reheat and eat throughout the week. The standard recipe calls to bake the quiche in a 9×13 baking dish but there are other ways to cut the size of this quiche if you are making it just for a few people or you want to make some for now and freeze some for later. You can easily cut the recipe in half and bake in a 9×9 or 8×8 dish or here are a few other ideas.

    Bake two 8×8 dishes and keep one and give one to family or a keto friend (this is perfect for keto beginners). You can also mix up a full recipe and bake half in an 8×8 dish and put the other half in muffin tins and freeze the ‘muffins’; they will reheat beautifully in the microwave. Last, make a full batch and bake them all in muffin tins, this would be wonderful for a brunch buffet and they taste just as delicious at room temp as they do warm.

    Keto Crustless Holiday Quiche

    A recipe from my best friend since the fifth grade! This quick and easy but super delicious Keto Crustless Holiday Quiche is the perfect answer to your holiday keto meal planning.

    Ingredients

    • 1 pound of breakfast sausage
    • 1 small yellow onion-chopped
    • 12 eggs
    • 2 cups heavy cream
    • 2 cups shredded cheddar cheese
    • 1/2 bag of spinach or approximately 6 ounces. I used the fresh baby spinach found in the salad section of the grocery store.
    • 1 teaspoon salt
    • 1 teaspoon pepper

    Instructions

    Preheat oven to 375 degrees

    Spray a 9x13 baking dish with non-stick baking spray

    Brown sausage and onion in skillet on stovetop until the sausage is cooked through

    Beat eggs and cream in a large bowl until fully incorporated

    Add in the cheese, spinach, cooked sausage and onion, salt and pepper

    Mix all ingredients together and pour into greased baking dish

    Cook for 45 minutes or until eggs are no longer 'wet'. Check after 35 minutes as mine were ready then and oven temps vary! Enjoy!

    This quiche reheats wonderfully!
