    Sara’s Famous ‘Mac’-N-Cheese

    I’ve been famous for this mac-n-cheese recipe. Now that I am keto, I wanted to continue to make this recipe, making it keto and keeping it just as famous! Swapping out cauliflower for the macaroni, I can’t wait for you to try it!

    Sara's Famous 'Mac'-N-Cheese

    Ingredients

    • This makes a small pan, or half of a recipe. This can easily be doubled.
    • 1 head Cauliflower, cut into small pieces (about the same size as macaroni noodles).
    • 1 teaspoon Butter
    • 4 ounces Velveeta Cheese
    • 1/2 cup Sharp Cheddar Cheese
    • 1/2 cup Colby Jack Cheese
    • 1/2 cup Smoked Gouda Cheese
    • 1 cup Heavy Whipping Cream
    • 1/4 teaspoon Smoked Paprika-optional
    • Salt and Pepper to taste.

    Instructions

    Preheat oven to 400 degrees

    Boil in salted water until just fork tender, don't over cook, we don't want mushy 'mac'-n-cheese. Drain and set aside.

    In a medium sauce pan over medium low heat, melt the butter, the sharp cheddar cheese with the colby/jack cheese and Velveeta cheese along with the heavy whipping cream, stir constantly until melted and smooth.

    Add in the Cauliflower, combine to mix and pour into baking dish, top with the smoked Gouda and bake at 400 degrees for about 15 minutes until slightly golden and bubbly.

    Notes

    This is a great dish to make ahead of time, freeze and reheat the day of the meal!
