Oh man this week was hard! I really wanted to title this week’s blog ‘why I hate keto this week’. If you can’t tell by now, I love to cook. I love creating and sharing recipes, trying new things and perfecting old recipes. This week was one of those weeks. All I wanted to do was cook and create. I have so many keto recipes and food ideas to share with you all. So, let’s start with what I’ve eaten this week on keto and DOWN 90 POUNDS!
First, let’s revisit why I said I wanted to title this week’s blog post, ‘why I hate keto this week’. Ha! I don’t hate keto AT ALL! I love it, it has saved my health, enriched my life, I can go on and on. My dilemma is that there are so many delicious recipes, food choices, options, possibilities, that I want to try and make them all!
Don’t get me wrong, not all weeks are like this for me. There are some days when a drive through loaded bunless burger is enough to make me happy. But my passion is creating and trying recipes and that’s exactly what I want to share with you all. Some of the creations I made and ate this week are from my own kitchen and some of the things I tried while out and about. I hope this will give you some fresh ideas and inspire you to seek out some alternatives to shake up your keto meals. So here’s what I’ve eaten this week on keto and oh by the way……..yes, I’m down 90 pounds!
What is the Secret to creating fresh, fast, delicious keto meals?
The secret to creating delicious keto meals is to make and eat what you love but be open and willing to try new things. I am always in the market to ‘ketofy’ things up a bit. How can I make this keto? I try to stick with ingredients I love but cut out the sugar, carbs and junky fillers. With the foods in the pictures above; these are things we eat all the time, but I have tweaked the ingredients to make sure that it fits into the keto way of eating. This is truly how you live out a keto lifestyle.
So here is the list of what I’ve eaten this week on keto and how I’m down 90 pounds!
- Smoked chicken wings, brisket and sautéed green beans-hubby and I went to Super Smokers BBQ this weekend. This is a great keto option, lots of meats and on Sunday they had some extra sides that were keto friendly; greenbeans and yellow squash!
- I made spicy refrigerator pickles-no sugar added, we have been eating them all week.
- The third picture is the ingredients of a vinegar based coleslaw, using apple cider vinegar, whole grain mustard, salt and pepper, green and purple cabbage, green onion and one carrot, with a hint of sweetener to pull it together it was so fresh tasting. If you don’t want to shred your own cabbage just buy some already shredded but honestly this was off the chart. This ranks right up there with my Wilted Lettuce Salad with Hot Bacon Dressing.
- Next was a 10/10. I was given a load of zucchini from my great friend Debi and knew I needed to fry it up. Using a pork panko and parmesan breading…..this recipe will soon be on the blog!
- Bacon Jam! Need I say more. This bacon jam may not look pretty, but it is pretty darn tasty. Piled on top of 2 cheeseburgers with white American cheese. No further explanation needed.
- Last, a lettuce salad with all the veg, grated parm cheese, bacon bits, creamy ranch dressing with blackened pan seared chicken and perfectly cooked hard-boiled eggs.
So, you have seen what I’ve eaten this week on keto and now down 90 pounds with this way of eating and living! Whether you choose to create and make meals at home or go for the bunless burger, you CAN eat really yummy food on keto. Eating keto can mean eating clean, fresh and delicious foods. This bacon jam is simple yet scrumptious. It can be used to top burgers, brats, as a sandwich spread, over cream cheese as a dip. Endless possibilities to this bacon jam. I cant wait for you to make it!
This bacon jam is simple yet scrumptious. It can be used to top burgers, brats, as a sandwich spread, over cream cheese as a dip. Endless possibilities to this bacon jam. I cant wait for you to make it! Dice the bacon and fry in a pan till crispy then drain on a paper towel. Slice or dice the onion it really doesn't matter the way it is sliced its all in the caramelization. Cook the onion on a medium low heat until soft and caramel in color. Do not cook fast as this will burn the onion, you want it to cook lower and slower to really caramelize. This process is the longest part of the recipe. Just watch it and stir often. May take up to 60 minutes to fully caramelize. Once the onions are caramelized, add in the balsamic vinegar and stir 1-2 minutes to incorporate into the onions. Now add the onions with balsamic, the bacon bits and pinch of salt to a food processor and pulse until a jam-like consistency. Store the jam in a covered jar or dish in the refrigerator.
