    Are you looking for the perfect salad for the entire family using the freshest ingredients that keeps you rockin’ the keto lifestyle? I have it for you! One of my family’s favorite recipes is this wilted lettuce salad with hot bacon dressing. I probably had you at ‘hot bacon dressing’ right? Let’s make it!

    First, the lettuce and green onions came straight out of my simple lettuce garden right on my deck! If you want to see how you can create a simple lettuce garden from your home, check out that post.

    When I say this is a family favorite recipe, I mean we make this salad almost weekly during the summertime and even eat it as a meal. It is fast and fresh with minimal ingredients but big on the deliciousness. The combination of fresh vegetables and the hot bacon dressing make this recipe a keeper and one to hand down from generation to generation.

    Wilted Lettuce Salad-The Ingredients

    Because this salad has so few ingredients you want the vegetables to be fresh and the bacon to be of great quality. For this recipe, I used a thick-sliced applewood smoked bacon. I love the use of thick-sliced bacon in this because you get these nice chewy smokey bacon bits throughout!

    Wilted lettuce salad with hot bacon dressing comes together quickly so gather all your ingredients and start by cutting the bacon into small chunks and fry in a pan on medium heat. While your bacon is frying you can pull all the other ingredients together. For the lettuce, wash, rinse and dry in a salad spinner. Chop the green onion in small diced pieces and then thinly slice the radishes. Finally, get out the salt and pepper and measure up your vinegar, it’s almost time to eat!     Wilted Lettuce Salad with Hot Bacon Dressing

    A family favorite with every ingredient keto friendly you and the entire family will love it!

    Ingredients

    • 5 cups mixed lettuce-I used Parris Cos and Green Leaf
    • 1/3 cup Green onion
    • 6 medium radishes
    • 5 slices thick-cut applewood smoked bacon
    • 1/4 cup white distilled vinegar
    • 1/4 tsp salt
    • 1/2 tsp pepper

    Instructions

    Cut up bacon into 1 inch pieces and place in frying pan over medium heat.

    While bacon is frying wash lettuce, spin in a salad spinner to dry and tear into bite sized pieces and put into large bowl.

    Rinse green onions and dice into pieces and place in bowl with the lettuce.

    Wash radishes, thinly slice the radishes and place into bowl with lettuce and green onion.

    Sprinkle salt and pepper over the lettuce and vegetables.

    Pour vinegar over the top of the entire mixture.

    When bacon is crispy in the pan and the fat has rendered off, carefully pour the bacon along with the rendered fat over the entire mixture, it will sizzle and crackle.

    Use salad tongs to toss the salad and distribute the hot bacon dressing throughout.
